They scrub down and cover their kitchen counters, and take out all their dishes and cookware replace them with their Passover dishes. My ex-sister-in-law had two sets of good china, and they also use paper plates a lot. The real Orthodox take it even more steps further. It's a major deal.
We have some friends who have two seperate kitchens in order to keep as Kosher as possible at all times.
