Made a cauliflower crust pizza from scratch last night.

First step in that was figuring out cauliflower ricing (get rid of the stem/leaves and pulse it in a food processor). 
Take the cauliflower rice, put it in a towel and squeeze the liquid out of it, then bake it @ 350 on a sheet pan until dry. 

Now I can stop buying that frozen stuff at Costco (which is, truthfully, quite convenient).

What I think I like about it is that, just for that time, there is no question about what I should be doing. There’s a purpose, a goal, and a reward for sticking to it.

Sounds good.  I made a rack of baby back ribs (half-price at Food Lion), mashed potatoes, and frozen mixed vegetables.  It was quite satisfying as well.
