Justine likes kimchi but I never got to where I craved it. They put it on everything like we do salsa. One of the kids staying with us had several different kinds ... like we do salsa.
The "pancake" is good but sometimes it feels like kind of a copout. Everything's better if it's fried Get some fire meat tho and you're all set.
fire meat -Must try! There's a "new"(only 4 or 5 years old,I have trust issues ) Korean place up the street.

Our favorite Korean restaurant uses it copiously, not just as side dishes, but in stir-fried dishes, too. There are a couple of local operations that make fresh Kim Chee as well. Alison made a batch of white kimchee a couple of years ago. The recipe came from Lucky Peach.
Couldn't stand Kim Chee until I got stationed in S. Korea. There are actually many varieties and it turns out that I LOVE the daikon and mu (Korean radish) based versions! Like the locals, I ate it with virtually every meal.
