i'd like that recipe.... my potato leek soup is so easy, as are most of them! i start out with 3 or 4 good sized leeks, trimmed of most of the dark green, sliced in half, washed, and diced. 4 golden potatoes, peels on, diced small. 2 slices of bacon. 4 cups chicken broth, salt and pepper to taste. that's IT...... i used to cook the leeks and bacon in butter first, but, over the past several years, i have started using smart balance. (and there isn't enough bacon to do anything in this other than add flavor) then i add the broth, and the potatoes, and simmer it until the potatoes are done. then i just puree it with my stick blender. it's simple, dairy free, and very yummy

Perhaps (someday) you will post this recipe?? I've been wanting to make a variation of the potato soup I usually make, just fer something different.
