Not really.  As far as chili, though, I use pinto beans.  They're much softer.  My mom doesn't like beans in chili but when I made it on Sunday, she said she could hardly tell they were in there.

use any beans you prefer eg borlotti, black beans, chick peas

I don't really have a recipe.  I just made it the other day with the stuff that triskele and schlabby sent me in the gift swap.  Other times, I just looked a recipe up online and it's been a long time so I couldn't tell you which ones I've used.

Nope- I just make what Dionysius describes as eggplant chilli- with aubergines and red kidney beans.

Yup, I like the crumbles.  Of course, it's going to be a different texture than people are used to but my friends, and even my mom, don't have a problem with it.  Like HC said, though, some people have food issues, soy included, but you could always let them know that it's made with soy-based crumbles.

I wouldn't use it for a party, because some people have gluten issues, and seitan is wheat gluten.

Seitan is much tastier than soy protein. I haven't actually made it, but I have eaten it. Just be sure that whoever is eating it does not have a gluten issue.
