Not really.  As far as chili, though, I use pinto beans.  They're much softer.  My mom doesn't like beans in chili but when I made it on Sunday, she said she could hardly tell they were in there.

Split pea or lentil soup with good, crusty bread?

I'm not a veggie, but Delia Smith's recipes are usually pretty reliable -

got a recipe?

I'm actually looking for a one-pot recipe that we can feed people who will be in and out through the day..... chili is one idea, but if you have any others, we're ready to hear em!

I don't really have a recipe.  I just made it the other day with the stuff that triskele and schlabby sent me in the gift swap.  Other times, I just looked a recipe up online and it's been a long time so I couldn't tell you which ones I've used.

Anyone ever make Vegetarian chili w/ seitan?

Nope- I just make what Dionysius describes as eggplant chilli- with aubergines and red kidney beans.

Yup, I like the crumbles.  Of course, it's going to be a different texture than people are used to but my friends, and even my mom, don't have a problem with it.  Like HC said, though, some people have food issues, soy included, but you could always let them know that it's made with soy-based crumbles.

Does seitan come in crumble form or would you have to make your own?

Seitan is much tastier than soy protein. I haven't actually made it, but I have eaten it. Just be sure that whoever is eating it does not have a gluten issue.
