Two: 1. Good Will Hunting. Matt Damon rips this preppy college guy a new one in the bar with his intellect. 2. Witness. The dance in the barn just after Harrison gets the car radio to work.. So romantic without even a kiss. It's all in their eyes.
the rippin' starts at about 2:20. indeed, a highly entertaining scene.
I love the scene in Never Cry Wolf (which is on AMC right now) where he cooks and eats the mice (to prove that large mammals can exist by eating a lot of small animals). It's hilarious and brilliant ... and if I could find the video I'd post it.

Henry Hill: You're a pistol, you're really funny. You're really funny. Tommy DeVito: What do you mean I'm funny? Henry Hill: It's funny, you know. It's a good story, it's funny, you're a funny guy. Tommy DeVito: what do you mean, you mean the way I talk? What? Henry Hill: It's just, you know. You're just funny, it's... funny, the way you tell the story and everything. Tommy DeVito: Funny how? What's funny about it? Anthony Stabile: Tommy no, You got it all wrong. Tommy DeVito: Oh, oh, Anthony. He's a big boy, he knows what he said. What did ya say? Funny how? Henry Hill: Jus... Tommy DeVito: What? Henry Hill: Just... ya know... you're funny. Tommy DeVito: You mean, let me understand this cause, ya know maybe it's me, I'm a little fucked up maybe, but I'm funny how, I mean funny like I'm a clown, I amuse you? I make you laugh, I'm here to fuckin' amuse you? What do you mean funny, funny how? How am I funny? Henry Hill: Just... you know, how you tell the story, what? Tommy DeVito: No, no, I don't know, you said it. How do I know? You said I'm funny. How the fuck am I funny, what the fuck is so funny about me? Tell me, tell me what's funny! Henry Hill: Get the fuck out of here, Tommy! Tommy DeVito: Ya motherfucker! I almost had him, I almost had him. Ya stuttering prick ya. Frankie, was he shaking? I wonder about you sometimes, Henry. You may fold under questioning
That was a great scene in a great movie. My other favorite scene from Goodfellas is that pre-credits sort of ending "dance" insert in slow-mo of De Vito firing his 45 semi-auto into the lens and the action and recoil are evident working up his arm while the hard-hitting score kicks in.

From Woody Allen's Broadway Danny Rose:
Not a very good movie, but it has one of my favorite scenes, culminating in a great line and comment upon society. Broadway Danny Rose (played by Woody in typical Woody fashion) busts a hump for a lot of bad acts. He is very loyal to them. He has one actually good act, an Italian crooner that he helps develop. Then, on the verge of breaking out, the crooner decides to go with a big management company. In the scene, the crooner tells Woody the news and he begins pacing back-and-forth, sputtering, and waving his arms. After the crooner, tells him, "Don't take it personally, Danny. It's just business.", Woody tells him: "What do you mean don't take it personally, it's just business? Of course I'm going to take it personally."
I've paraphrased from memory the lines, but you have to see it being delivered by Woody, in his inimitable style. I always think of it whenever I observe someone using the "it's just business" line.

Roy Hobbs: I coulda been better. I coulda broke every record in the book. Iris Gaines: And then? Roy Hobbs: And then? And then when I walked down the street people would've looked and they would've said there goes Roy Hobbs, the best there ever was in this game.

Lots of good scenes in Good Will Hunting.
There was that powerful scene that ends with Robin Williams grabbing Matt Damon by the throat after he has insulted his deceased wife. 'I will end you."
