Normally I would make the art in PS and the text in AI and save as a pdf from AI. But, yeah, seems like a PS pdf ought to be just as acceptable.

Yeah, and I'm not too thrilled with how that raster looks. bleah.

It shouldn't matter what you do with the text once you save it as a tif or jpg. It be 100% raster art then.

wow. Pdf makes perfect type. WAY better than Smart Object or Convert to Shape... but PDF screws up my background layer. I may fix that and try the pdf again.

I didn't realize it was ever possible to make a selection off the canvas. I have a feeling you got into a routine that Adobe closed the door on because it bit more people than it helped. I certainly lost stuff that was hanging off the edge of the canvas and learned to keep the canvas large enough to hold everything.
You might also investigate whether Smart Objects layers are the way to go. If you need to doctor a layer you could place that layer instead and tweak the original and have it update in PS? I don't know I never really use that option
Your example of adding a stroke... wouldn't you be better off with a path? You could make your selection, make a path from that, stroke the path (onto another layer) and modify that path as much as you want and just delete and redraw the path whenever you want. Layer masks could probably achieve the same result, and the stroke would be redrawn every time you edit that mask.
But like the others, I'm sure I'm not grasping everything I need to know to help. So good luck!
